  • Also known as sweet peppers, paprika and bell peppers, there are many varieties with shapes ranging from rectangular and stocky to thin and tapered
  • The simplest names may be “green pepper” (immature and less sweet) and “red pepper” referring to mature red and orange peppers
  • All are hollow with a thick pericarp and leathery skin
  • Flavor ranges from sweet and mild to sharp and spicy

Selecting

Green peppers are immature but frequently eaten for their less sweet taste. Ripe peppers will be yellow, orange or red and should be firm with bright, shiny skin.

Storing

You can store unwashed peppers in your refrigerator for at least a week.

Eating

Bell-shaped peppers are fairly sweet and spicy, but not too hot. They are a tasty and colorful addition to salads, and light and delicious when they are stuffed and baked.
